Review

Our October Greek Spice Madam box was wonderful. We began by making up the dough for the Pita Bread and marinating the chicken thighs that would become the meat used in the Gyros. We then made the Keftedes (zucchini fritters), which had to solidify up in the fridge for a while before we could fry them up. After making the filling for the Spanikopita, we layered it with the phyllo dough and stuck it in the oven. While it was in the oven, we made up the Tzatziki sauce, the salad that went along with the Gyros, and a Greek salad (not part of our box, we just wanted to make a salad). We baked up the chicken, toasted the pita in a frying pan, and assembled and baked the cake, so everything was ready to eat around the same time. We finished cooking in less than 5 hours and served an amazing feast. The Keftedes made an amazing appetizer: crispy, cheesy, and yet still light and fresh. We followed that with the Greek salad we made, which was wonderfully fresh. The Gyros were an amazing combination of tangy chicken with vinegary salad, and cool, refreshing Tzatziki Sauce, the Spanikopita was crispy, spinachy, and rich, and the cake was amazingly moist and honey-flavored. We had Erik’s mom, who had been to Greece, give the meal a try, and she said it brought her right back. A great box to finish out 2 years with Spice Madam! Looking forward to what year 3 brings.
