Southwest Salad

Anyone who tells you salad is boring or bland has DEFINITELY NEVER had this salad. With so much flavor and protein, it will satisfy you and keep you going like a salad never has before.

Ingredients

  • 2 heads green leaf lettuce
  • 1 head radicchio
  • 2 green peppers
  • 3 roma tomatoes
  • 1 red onion
  • 1 can corn
  • 1 can black beans
  • Cilantro
  • 2 chicken breasts
  • Tortilla strips
  • Mexican cheese
  • Chipotle ranch dressing

Equipment

  • Knife
  • Can opener
  • Grill (optional)
  1. Grill the chicken breasts: Pat chicken breasts dry with paper towels and season with salt and pepper on both sides. Grill for 10 minutes a side, until cooked through. Let rest before dicing into bite sized chunks.
  2. Prepare the salad ingredients: Prep the lettuce and radicchio by slicing through them with a knife, discarding the root of each into the compost. Dice the green peppers into bite-sized squares. Dice the roma tomatoes into 1/4″-1/2″ cubes. Small dice the red onion. Drain and rinse the black beans and corn. Chop the cilantro.
  3. Assemble the salad: Layer salad ingredients from green leaf lettuce, radicchio, green peppers, tomatoes, onion, black beans and corn, cilantro, chicken breast, tortilla strips, Mexican cheese, and top with chipotle ranch. Serve immediately.

Pro tip: If you plan to serve this all week like us, be sure to leave the chicken off and store in a separate container. Top the salad with the chicken, tortilla strips, Mexican cheese, and chipotle ranch just before serving.
