Wrapping up summer with August’s Spice Madam box, which was from New Orleans! So fitting as we are vacationing there for a week in November. We made Jambalaya, Gumbo, Corn Maque Choux, and Beignets with Cajun Seasoning, Filé Powder, and Jambalaya Blend. The maque choux had a surprising amount of spice and was less creamy than we imagined it would be, but was a nice fresh pairing with all of the deeper flavors of the gumbo. We have been making our own version of jambalaya for a while now, which isn’t as traditional, but we prefer it over this recipe. That said, the beignets were amazing and so simple to make. We can’t wait to compare them against the ones from Café du Monde when we visit New Orleans!
