Time for July’s Spice Madam box, which was from Columbia! With achiote, guascas, and sazon seasoning, we made Aji Pincante Sauce (a fresh salsa), Arroz Amarillo (a veggie rice dish), Papas Rellenas Colombianas (deep fried potato balls with ground beef centers), Pernil Asado Colombiano (roasted beer-marinated pork shoulder), Ajiaco (chicken, corn, and potato soup), and Torta de Tres Leches (literally translated to “three milk cake”, this is a cake soaked in sweetened condensed milk, evaporated milk, and heavy cream – not pictured). We made this box our own by adding in some additional Columbian recipes, including Limonada de Coco (a coconut lime drink) and Patacones de Colombia (fried plantains). We used the Aji Pincante Sauce, Pernil Asado Colombiano, and Arroz Amarillo with some corn tortillas to make street tacos and had the Papas Rellenas Colombianas as a side to the Ajiaco. We topped our Torta de Tres Leches with strawberries and blueberries, which was not only delicious but also patriotic in celebration of July 4th (albeit a little late!). Looking forward to next month’s box so we can add it to the growing collection of recipe cards!
