Weekly Meal Plan 1/10/21 – 1/16/21

Moving into the second week of the new year, we will be taking advantage of many of the sales at Shaw’s this week.

Meatloaf with sweet potato fries and a side salad – utilizing the sale on 90/10 ground beef and salad, we looked in our fridge, freezer, and pantry to discover frozen sweet potato fries and many other needed ingredients for meatloaf.

Moroccan couscous and lamb tajine – if you didn’t see our Spice Madam box from the recent months, check out the post here. We will be re-making 2 dishes from the box for our meal this week. We had the couscous on hand and always have chickpeas and canned tomatoes on hand (post coming soon about what ingredients we keep on hand at all times – keep your eyes peeled).

We don’t usually post about breakfast plans, but this week we will using up some leftover spinach from last week’s BLAHs to make smoothies for breakfast. We will be supplementing with breakfast sandwiches, cereal, and overnight oats.
