No Bake Cookies

Oh no, you’ve got guests coming over and forgot to make a dessert. Or maybe you’re just craving some sort of sweet but don’t really feel like making anything. Either way, no bake cookies are the answer. They are super easy, take no time at all, and use ingredients you should already have on hand.

Ingredients

  • 1 3/4 cup sugar
  • 1/2 cup milk
  • 1/2 cup (1 stick) butter
  • 1/4 cup unsweetened cocoa powder
  • 1 tablespoon vanilla extract
  • 1/2 cup peanut butter*
  • 3 cups oats*

Equipment

  • Medium pot
  • Wax paper
  • Cookie scoop (optional)
  1. In a medium sauce pan, combine sugar, milk, butter, and cocoa. Bring to a boil and cook for 90 seconds, stirring often.
  2. Remove from the heat and stir in vanilla extract, peanut butter, and oats. Combine thoroughly.
  3. Using a cookie scoop or spoon, place in cookie-sized dollops on wax paper and let cool. Depending on the size you make your cookies, you may get more or less, but we got 12 out of our batch.

*This recipe is super forgiving. Use whatever type of peanut butter (crunchy, regular, natural) or oats (quick cooking, old fashioned/rolled, not instant) you have on hand, and it should come out just as good. Crunchy peanut butter or old fashioned/rolled oats will add more texture than smooth peanut butter or quick oats. You could also play around with mixing in other things, such as M&Ms or peanut butter chips, maybe even cacao nibs or coconut flakes. If you make these enough, you might be able to go from memory, as the amount of most of the ingredients are either 1/4 or 1/2 cup.
